This was a recipe my uncle (a professional baker) gave to me many years ago

Serves: 1 loaf
Ingredients
  • 1 package of dry yeast
  • ¼ cup of warm water
  • 1 teaspoon sugar
  • 1 cup cottage cheese
  • 2 Tablespoons sugar
  • 1 Tablespoon minced dry onion
  • 1 Tablespoon butter
  • 2 tablespoons dill seed
  • 1 teaspoon salt
  • ¼ teaspoon baking soda
  • 2 ½ cups flour
  • Cornmeal
Instructions
  1. Dissolve the yeast in the water with 1 tsp. sugar
  2. Warm cottage cheese and put in a bowl
  3. Add the sugar, dried onion, butter, dill seed, salt, and baking soda
  4. Mix together
  5. Add the yeast mixture; mix well
  6. Add the flour, and mix until it forms a dough
  7. Put the dough in a buttered dish
  8. Let rise until double; about 1 ½ -2 hours
  9. Form into a round loaf
  10. Prepare a cookie sheet that has been greased with shortening and cornmeal sprinkled on it
  11. Place the bread dough on the cookie sheet
  12. Let rise until double—about 45 minutes
  13. Brush with melted butter before putting it in the oven
  14. Bake at 350 degrees for 40-45 minutes
