Lemon Yogurt Scones

Ingredients
  • 4 cups flour
  • 2 tablespoons baking powder
  • ¼ cup sugar
  • Dash salt
  • 1 stick cold butter
  • 4 tablespoons grated lemon peel
  • 2 large eggs (room temperature)
  • ⅔ cup lemon yogurt
  • ½ cup currants or raisins
  • 1 egg mixed with 1 teaspoon water (for glaze)
Instructions
  1. Preheat the oven to 425 degrees
  2. Grease a baking sheet
  3. Mix together the flour, baking powder, sugar and salt.
  4. Cut in the butter until the mixture resembles coarse crumbs
  5. Add the lemon peel, eggs, yogurt, and currants.
  6. Mix until combined
  7. On a floured surface, roll the dough into a 9-inch circle, ¾ inch thick
  8. Cut rounds, squares, triangles, etc., in the dough
  9. Put on the prepared cookie sheet and brush the tops with glaze
  10. Bake 7-9 minutes
  11. Serve with lemon curd
