Lemon Yogurt Scones

Serves: 2 dozen
- 4 cups flour
- 2 tablespoons baking powder
- ¼ cup sugar
- Dash salt
- 1 stick cold butter
- 4 tablespoons grated lemon peel
- 2 large eggs (room temperature)
- ⅔ cup lemon yogurt
- ½ cup currants or raisins
- 1 egg mixed with 1 teaspoon water (for glaze)
- Preheat the oven to 425 degrees
- Grease a baking sheet
- Mix together the flour, baking powder, sugar and salt.
- Cut in the butter until the mixture resembles coarse crumbs
- Add the lemon peel, eggs, yogurt, and currants.
- Mix until combined
- On a floured surface, roll the dough into a 9-inch circle, ¾ inch thick
- Cut rounds, squares, triangles, etc., in the dough
- Put on the prepared cookie sheet and brush the tops with glaze
- Bake 7-9 minutes
- Serve with lemon curd
