Habermeyer Original Summer Salad

Serves: 8 servings
  • 4-6 tomatoes (any kind except Roma)
  • ½ Japanese cucumber
  • 4-6 mini sweet bell peppers
  • ¼ cup cilantro (adjust according to taste)
  • ⅛-¼ cup feta cheese
  • 2-3 teaspoons sea salt (my favorite brand is Celtic Sea Salt®)
  1. Cut and dice the tomatoes.
  2. Cut and dice the cucumber
  3. Slice the peppers horizontally
  4. Chop the cilantro
  5. Sprinkle the sea salt over all
  6. Gently toss all the ingredients together except the feta cheese
  7. Refrigerate for 20-30 minutes. The sea salt brings together all the flavors and enhances the taste.
  8. Before serving, sprinkle with feta cheese
